How to Cook Calamari & Marinate Recipe

Calamari is not a fish you can say to take it immediately and put it in the pan. Before cooking, you have to go through some operations. Otherwise, you can’t get the soft inside and the crispy flavor as you eat in the restaurants.

First of all, you should clean and chop the squid rings and knead well in the sauce you have prepared and marinate in the refrigerator. You can then continue cooking.

The ingredients needed to prepare the sauce are actually very simple found in almost every home:

Sauce Preparation For Marinating – Ingredients:

1 teaspoon of carbonate
1 teaspoon of granulated sugar
1 lemon
1 glass of milk or mineral soda

We start to knead the squid and all the ingredients (except milk) in a large bowl by squeezing and squeezing thoroughly. In the meantime, it will bubble. This is quite normal. The longer you perform this squeezing and rubbing process, the more consistency the squid gets. I suggest you do it for about 30 minutes, which is great. It can be difficult to knead for so long as it is a tiring process. If you want a nice result, knead the squid with strong force for at least 10 minutes.

Marine Process:

Pour a glass of milk or mineral water into the squid and mix for 1-2 minutes.

Then, if you wish, you can close the mouth of this mixture with stretch film and leave to rest in the refrigerator. The marinating process is a very important part. The longer you marinate, the more soft the squid will be, otherwise it will be rubbery.

If you have time, I suggest you keep it in the fridge for 1 night. If you have limited time, let it rest for at least 2-3 hours.

Do not wash them after you start cooking.

Calamari Pan and Mayonnaise Sauce with Basil

Ingredients of Calamari:

Half a kilo of Calamari (cleaned and chopped to the ring, you can use frozen product if you wish.)
1 egg
Less than half a cup of milk
1 cup normal white flour
1 cup of corn flour
Half a teaspoon of salt
Half a teaspoon of black pepper
Half a teaspoon of garlic powder (you can also use 1-2 cloves hammered garlic instead)

Ingredients of Sauce:

2 tablespoons mayonnaise
2 tablespoons cream
1 tablespoon lemon juice
1 teaspoon dried basil (you can use 2 tablespoons finely chopped up if you are going to use fresh)
Half a teaspoon of garlic powder (you can also use 1-2 cloves hammered garlic instead)


Mix the eggs and milk in a container.
Mix white flour, corn flour, salt, pepper and garlic powder (or crushed garlic) in a freezer bag.
Dip the calamari in the egg and milk mixture and throw it into this bag.

After you throw it all away, tie your mouth, shake it a few times. (this is the most practical way to find calamaries in a mixture of flour and spices)

Heat the oil at 2-3 fingers high in a deep pan or saucepan,.

One of the tricks of making calamari is to marinate in sauce and another important detail is cooking in plenty and hot oil.

Once you have made sure that the oil is well heated, you can start cooking.

It is enough to flush for 1-2 minutes after pouring into oil. You can get the squid when it starts to turn golden.

Don’t worry 1-2 minutes is enough, if you cook more, it dries and becomes rubbery.

Instead of throwing all of the calamaries in the same piece, you will not drop the temperature of the oil.

For the sauce, mix the sauce ingredients mentioned above in a container and allow to rest for 1-2 hours.
